Ice Cream + Nerds

Maybe Nerds wouldn't be the first thing you think of when it comes to ice cream toppings.
 
But you seriously must try it.
 
Because my sister first tried it/introduced me to it and she is AAaaaaaamazing.
 
To make it even better, try it with Costco vanilla ice cream.
 
And whipped cream.
 
Except we didn't have any whipped cream, but nevertheless,

It's Friday, guys. 

I don't know about you...

But I am so excited!

Because its Friday, and its February.

And tomorrow it will be March.

And although its still cold outside

The snow is frozen so that in places you can almost walk entirely on top of it. 

Thrilling.

Cookie Dough Yogurt

Hey yall!
 
No, I'm not a southerner- I just wanted to say that.
 
Happy Monday :D
 
So, I've seen this recipe on Pinterest and today I decided to try it out.
 
I can now officially say: it's super simple and delicious!
 
And now you want to try it out too, right?
 
Ready???
 
Get your GREEK YOGURT (may 1/2 to 2/3 cup) out and put it in a bowl.
 

Add a spoonful (about a Tbs.) of HONEY to your yogurt.

 
 
Add approx 1 Tbs. PEANUT BUTTER.

 
Add VANILLA (approx. 1/2 tsp)
 

A dash of SALT.
 
 
 A liberal amount of MINI CHOCO CHIPS.
 
 
 Mix, and voilà:
 
This is really delicious, though a taddy bit on the decadant/rich/sweeeeet side. 
 
It makes a good mid-afternoon pick-me-up. 
 
It would probably even serve as a quicky/on-the-go breakfast or lunch.

Coconut water- with Aloe!

A while back, I was pleased to learn about "young coconuts" (Google it: they're not brown like your standard coconut, they're white and a bit oddly shaped).

Then, not too long, ago I discovered coconut water in a can!

MMMM!

I like it as an alternative to soda or sweet tea because it's mildly sweet, but has far less sugar than soft drinks.

It is, however, more pricey than soft drinks, so I don't make a practice of drinking it every day.

I watch for it to go on sale and keep it stashed away for a special treat. :)

Anyhow

Today, I tried Coconut water with Aloe.


It's my favorite brand of coconut water.

It had been on sale and they didn't have many of the regular coconut water so I bought a few of these.

The "Coco Aloe" is sweet and mild- just like the normal coconut water!

But boy, the chunks of gloppy aloe were surprising! 

The best thing I could compare it to is drinking well cooked tapioca in coconut water.

Anyways, it was tasty and unique. 

I think I like it best by itself- the texture is too weird if you drink it while you're eating something.

If you haven't tried coconut water, give it ago.  I'd go with the "Coconut Water" (without Aloe) if you haven't had it before.

My favorite brands of coconut water are "Taste Nirvana" and "Trader Joe's".

What to Eat when You're Sick


Welcome to this weeks of edition of "What to Eat when You're Sick."

Yes, it's February- and it's still cold outside!

Winter has dragged on for what seems forever.

Flu and colds are abundant right now.

So I shouldn't be surprised that after being relatively healthy this winter, I finally caught something.


Everyone seems to have an opinion about what you should and shouldn't eat when you're sick.

I personally would say sugar and munchies would fall in the "Wont help you get better" category.  (Though I admittedly have a tendency to reach for this stuff, especially when my appetite isn't really there). 

While water, tea, fruits, veggies and meat/veggie broth fall in the "Good" category.

So here's what I ate yesterday afternoon:

  • Chai tea with honey
  • Apple
  • Cheese stick
  • Edamame crackers 
  
 
In addition to diet, I feel its important to get plenty of sleep and to not over exert yourself when you're fighting a cold/flu bug.

Winter Shower

But not the weather sort of shower. 

Not snow or rain.

Nope. 

This was a wedding shower!

Weddings showers are such a joyous occasion!

Our family was delighted to help plan and prepare some of the food for a wedding shower for a friend!

Our goal for the shower was to cater to various dietary needs by making some of the food gluten free.

While browsing pinterest, I found the idea of chocolate covered pretzels.

I was pleased to discover that some stores carry these delicious gluten-free mini pretzels:


 

So we took vanilla candy coating (essentially white chocolate) along with a bit of food coloring 
And melted it down for pretzel coating!
 

 
 
We added a bit of fancy sugar for extra decoration/sparkle!

 
There you have it! 
 
White chocolate pretzels are delicious, and so simple to make!
 
I'd say they're a great edition to any party or special event! ;)
 
 
 
 
On to other things.
 
 
 
 
What a winter we've had!
 
Freezing temperatures. 
 
Lots of snow! 
 
And beautifully painted skys.
 
Isn't it amazing how God has not only designed all of creation in such detail, but also made it so beautiful??
 
I struck by the sky the day I took this picture, and how the snowey parkway looked almost like frozen lake:

 
 
 
 
And finally
 
God has so blessed me to give me such a sweet, skilled, diligent and generous sister!
 
She helped me to paint little white hearts on my nails
 
And bought us lunch the other day, including Sweet tea!!! :D
