{Friday}

Life is so crazy and busy!

Its Friday and its been an awesome day!

Various moments/highlights from today:

Standing behind the curtain in the ultrasound room folding laundry while humming "If I Only Had A Brain"...
(Pay no attention to the girl behind the curtain).

While at school, I realized is my half birthday!
Sweet! ^.^

And then there's the weather!
It was so nice, I decided to wait outside for my ride at school. 
At 43 degrees, it felt pleasantly "warm" for a change. 
The fresh March air blew gently against my face and hair lending a sense of anticipation and excitement. It makes me excited to be outside and look forward to getting together with people.
There are puddles on the sidewalk (yes, melted ones!), and melting mounds of snow piled on the sides of the sidewalks.
Large patches of mostly yellow-y/brown grass are interspersed with flat stretches of snow.
The sky is a cool pale grey-blue, with patches of mildly pinkish/orange/tan near the horizon
There's a subtle cloud cover- difficult to say where clouds end and sky begins.
The sun was shining brightly, but was somewhat muted by the clouds.



An awesome "once in a lifetime" moment today was getting picked up at school by all the aunts on moms side! Two of them came into town so they could all spent the day together today.
So they all came in one van to pick me up after school.
It was so nice- we got to visit on the way home which was a special treat!

Then tonight, I found three 'baby" oyster crackers at the bottom of a bag of oystercrackers.
I thought they were so cute!

Another busy week come and gone.
God is good!  He gives us the grace and strength for each day!
I'm thankful for all the dear, kind, patient people God has placed around me!
Good days, bad days, happy days, sad days.... God has a purpose in everything!

Baking Banana Muffins

It's Wednesday!

And Wedneday is the perfect day to write a rambling blog post about baking.

Baking and blogging is sort of therapeutic for me.

Some people like to watch TV in the evening.

Whereas, me- I like to bake!

So this evening, I got the itch to bake something.

I decided to make use of the spotty bananas on the counter and make

Banana Crumb Muffins!

It took me a little longer than it should have

Probably because its late in the day which means I'm a bit sluggish and I was also trying to help get dinner ready.

So after having the oven preheated and running for a long time

And filling the muffin cups with batter

Imagine my horror to discover that I had to take a step BACKWARDS in the recipe.

If you've any experience with baking

Especially with muffins and cupcakes

You've probably experienced this horrible mishap:

*THAT MOMENT WHEN YOU HAVE TO EMPTY OUT THE MUFFIN LINERS AND REFILL THEM*

Maybe you forgot to grease the muffin liners

Or maybe (like me) you forgot to add the egg to the batter!

Anyhow, the egg was added and the muffin cups, refilled.

What a wet, goopy, sloppy mess it was!

Having some perfectionistic tendencies, it really bothered me to see my muffins such a mess.

And no, I didn't even bother to take a picture.

Anyhow, after filling the muffin liners with batter, it was time to make the crumb topping.

I decided to experiment by substituting margarine for "cold butter" in the tipping.

Bad idea.

I kept adding flour, but the "crumb topping" was still more of a soft lumpy mix. 

So I ended up dropping a few lumps on each muffin.

And popped them in the oven.

18 minutes later:


Yay! 

Banana muffins.

No, they don't look spectacular.

But they still taste good, and I think that's probably the more important than how they look. =)
