Summer!

Well, summer is already half over.
But I haven't let it slip by without spending some time in the kichen!
 
 
A few weeks ago tried making my own Chick-fil-a sauce!
Found this recipe on pinterest. (don't remember the recipes I used)
Honey mustard + bbq sauce.
Mmmmmm!


I'm a fan of fast dry polish.
For these I used fast dry +  a coat of glitter nail polish.


Home made egg mcmuffins. 
They're better than the real deal! 
English muffin/butter + Canadian bacon + American cheese + a poached egg. 
And no breakfast is complete without orange juice! :D

Scotcheroos!
It involves sugar/cornstarch/peanut butter coated chex on the bottom, with semisweet/butterscotch chips& peanut butter & vanilla on the top. 
Decadent and delicious.

*Spoiler* they don't taste like oreos.
BUT they were pretty good for a homemade sandwich cookie. :)

Crushed oreos and chips a-hoy, mixed into a fluffy "ice cream" batter. 
It was delicious, though it tasted more like cheesecake than ice cream.

I'm doing great, now that I've learned how to enjoy campfire delights from the comfort of our own kitchen.  (See above)^^
 
My sister introducted us too the idea- so fantastic!
 
All you need is a knife and a stovetop! 
 
Brown a marshmeller' to your liking, get yourself some chocolate/gramcrackers and tah-dah!

SOO000,  I know its been forever since I posted.
 
Life has been busy, and, in times like these, blogging comes low on my list of priorities.
 
This semester has been eaten up by work and school.
 
And stress.  Plenty of that.
 
Lots of deadlines and things to keep track of.
 
Lists have been a huge help to me lately- getting everything I need to do organized in one place so I can see what I need to accomplish and so that I don't forget anything!
 
I'm tired...... really!  When will I learn to get on a better sleep schedule?!?!
 
 School and work are busy
 
And juggling stuff gets overwhelming at times
 
 
 
 
BUT
 
God is faithful.
 
God has a purpose.
 
And he's in control. :)
 
 
Despite my busy schedule, I've not forgotten my handy dandy camera.

Mexican grocery stores are the best.
 
Recently I stopped in a Cerm*ak Market with my mom.
 
They had a large assortment of "Pan Dulce" in the bakery section, as well as a little "churro" stand on the way out!!!
 
Era tan divertido tratar la comida Mexicana. 
 
La comida de la cultura es tan terrifica como la idioma. 
 
Me encanta tratar comidas nuevos y practicar mi espanol! ;)
 
 
 
 
 
Tr*der Joes never ceases to amaze me.
 
We just recently tried these coconut chips.
 
Such a great little sweet snack. 
 
Seriously, I should work for them in their sales (& taste testing) departments.  Hehehe

Just recently, I found this amazing combination.
 
Scooperman ice cream with peanut butter.
 
Can you say "yummmyyy!" ???
 




I love avocados.

They seem to go good with just about anything.

What's really terrifical is you can fill the middle with stuff, like Chili! (see below)

We were shopping at Meijer one day a while back, and they were giving out samples!
 
Cutest thing ever!
 
Its just vanilla pudding with green food coloring, and a vanilla wafer in the middle! 
 
 
 
 
 
I've had some really awesome coworkers.

They have this thing where different days, someone buys Starbucks for everyone, and then on another day, you buy it for everyone.

Anyways, one day my coworker got us starbucks, and I got a "white chocolate crème frappucinno". 

Its amazing!  Like a lighter version of a vanilla milkshake! (see below)

I don't often buy frappuccinos, porque cuestan tan MUCHO!

So it was sweet of my coworkers to treat me! :)

If you have not tried one, I recommend it.

Soooo delicious.  Try one!

Or maybe don't.  Because once you do, you'll want to go back! :P






Yesterday I had the opportunity to try sushi for the first time!


The sushi was...  interesting.
 
I have mixed feelings about it. lol
 
I tried several kinds with various fillings... "spicy salmon", "Californian", and I think there were some with crab and some with shrimp.

I didn't mind the fish/filling so much, but the black stuff lining the rice (forgive my lack of a better word, as I am no sushi expert) was strong in flavor. 

The wasabi sauce added a kick- let me tell you, it doesn't take much ;)

And the ginger and soy sauces were good as well.

The best part was, my company gave me a voucher for lunch, so after using the voucher I only had to pay 90 cents! ;D
 



Yesterday was so beautiful in the afternoon!

I mean it was humid, but it was so warm, and I was glad for that!

Having a bit of extra time, I seized the opportunity to take a little walk.

In a pond not far from where I was, there were two swans.

I love swans.  They're like geese, only bigger and more elegant. 

 
They were in a fence.
 
I felt sorry for them and wanted to feed them some grass...
 
But I happen to know that swans are very strong/powerful
And there were also some landscaping dudes around and did not want to get a lecture, so..
 
I ended up just sitting in the grass a short distance away and snapping a few pics with my phone.
 
 
 
 
And lastly, Frozen!
 
Yeah, I know the movie has been way played-up (and I'm not saying there aren't some issues with the movie)
 
And the music is a little overplayed
 
And "over-covered" on youtube
 
BUT
 
I love the soundtrack.

{Friday}

Life is so crazy and busy!

Its Friday and its been an awesome day!

Various moments/highlights from today:

Standing behind the curtain in the ultrasound room folding laundry while humming "If I Only Had A Brain"...
(Pay no attention to the girl behind the curtain).

While at school, I realized is my half birthday!
Sweet! ^.^

And then there's the weather!
It was so nice, I decided to wait outside for my ride at school. 
At 43 degrees, it felt pleasantly "warm" for a change. 
The fresh March air blew gently against my face and hair lending a sense of anticipation and excitement. It makes me excited to be outside and look forward to getting together with people.
There are puddles on the sidewalk (yes, melted ones!), and melting mounds of snow piled on the sides of the sidewalks.
Large patches of mostly yellow-y/brown grass are interspersed with flat stretches of snow.
The sky is a cool pale grey-blue, with patches of mildly pinkish/orange/tan near the horizon
There's a subtle cloud cover- difficult to say where clouds end and sky begins.
The sun was shining brightly, but was somewhat muted by the clouds.



An awesome "once in a lifetime" moment today was getting picked up at school by all the aunts on moms side! Two of them came into town so they could all spent the day together today.
So they all came in one van to pick me up after school.
It was so nice- we got to visit on the way home which was a special treat!

Then tonight, I found three 'baby" oyster crackers at the bottom of a bag of oystercrackers.
I thought they were so cute!

Another busy week come and gone.
God is good!  He gives us the grace and strength for each day!
I'm thankful for all the dear, kind, patient people God has placed around me!
Good days, bad days, happy days, sad days.... God has a purpose in everything!

Baking Banana Muffins

It's Wednesday!

And Wedneday is the perfect day to write a rambling blog post about baking.

Baking and blogging is sort of therapeutic for me.

Some people like to watch TV in the evening.

Whereas, me- I like to bake!

So this evening, I got the itch to bake something.

I decided to make use of the spotty bananas on the counter and make

Banana Crumb Muffins!

It took me a little longer than it should have

Probably because its late in the day which means I'm a bit sluggish and I was also trying to help get dinner ready.

So after having the oven preheated and running for a long time

And filling the muffin cups with batter

Imagine my horror to discover that I had to take a step BACKWARDS in the recipe.

If you've any experience with baking

Especially with muffins and cupcakes

You've probably experienced this horrible mishap:

*THAT MOMENT WHEN YOU HAVE TO EMPTY OUT THE MUFFIN LINERS AND REFILL THEM*

Maybe you forgot to grease the muffin liners

Or maybe (like me) you forgot to add the egg to the batter!

Anyhow, the egg was added and the muffin cups, refilled.

What a wet, goopy, sloppy mess it was!

Having some perfectionistic tendencies, it really bothered me to see my muffins such a mess.

And no, I didn't even bother to take a picture.

Anyhow, after filling the muffin liners with batter, it was time to make the crumb topping.

I decided to experiment by substituting margarine for "cold butter" in the tipping.

Bad idea.

I kept adding flour, but the "crumb topping" was still more of a soft lumpy mix. 

So I ended up dropping a few lumps on each muffin.

And popped them in the oven.

18 minutes later:


Yay! 

Banana muffins.

No, they don't look spectacular.

But they still taste good, and I think that's probably the more important than how they look. =)

This has been adventures in baking with Isabel!

Ice Cream + Nerds

Maybe Nerds wouldn't be the first thing you think of when it comes to ice cream toppings.
 
But you seriously must try it.
 
Because my sister first tried it/introduced me to it and she is AAaaaaaamazing.
 
To make it even better, try it with Costco vanilla ice cream.
 
And whipped cream.
 
Except we didn't have any whipped cream, but nevertheless,

It's Friday, guys. 

I don't know about you...

But I am so excited!

Because its Friday, and its February.

And tomorrow it will be March.

And although its still cold outside

The snow is frozen so that in places you can almost walk entirely on top of it. 

Thrilling.

Cookie Dough Yogurt

Hey yall!
 
No, I'm not a southerner- I just wanted to say that.
 
Happy Monday :D
 
So, I've seen this recipe on Pinterest and today I decided to try it out.
 
I can now officially say: it's super simple and delicious!
 
And now you want to try it out too, right?
 
Ready???
 
Get your GREEK YOGURT (may 1/2 to 2/3 cup) out and put it in a bowl.
 

Add a spoonful (about a Tbs.) of HONEY to your yogurt.

 
 
Add approx 1 Tbs. PEANUT BUTTER.

 
Add VANILLA (approx. 1/2 tsp)
 

A dash of SALT.
 
 
 A liberal amount of MINI CHOCO CHIPS.
 
 
 Mix, and voilà:
 
This is really delicious, though a taddy bit on the decadant/rich/sweeeeet side. 
 
It makes a good mid-afternoon pick-me-up. 
 
It would probably even serve as a quicky/on-the-go breakfast or lunch.

Coconut water- with Aloe!

A while back, I was pleased to learn about "young coconuts" (Google it: they're not brown like your standard coconut, they're white and a bit oddly shaped).

Then, not too long, ago I discovered coconut water in a can!

MMMM!

I like it as an alternative to soda or sweet tea because it's mildly sweet, but has far less sugar than soft drinks.

It is, however, more pricey than soft drinks, so I don't make a practice of drinking it every day.

I watch for it to go on sale and keep it stashed away for a special treat. :)

Anyhow

Today, I tried Coconut water with Aloe.


It's my favorite brand of coconut water.

It had been on sale and they didn't have many of the regular coconut water so I bought a few of these.

The "Coco Aloe" is sweet and mild- just like the normal coconut water!

But boy, the chunks of gloppy aloe were surprising! 

The best thing I could compare it to is drinking well cooked tapioca in coconut water.

Anyways, it was tasty and unique. 

I think I like it best by itself- the texture is too weird if you drink it while you're eating something.

If you haven't tried coconut water, give it ago.  I'd go with the "Coconut Water" (without Aloe) if you haven't had it before.

My favorite brands of coconut water are "Taste Nirvana" and "Trader Joe's".
